Picture: Buddha's Hand or Fingered Citron (Citrus medica var. sarcodactylis), a natural variety of citron in which the segments of the fruit are elongated and fleshy. The fruit has very little flesh and no juice but it is very aromatic. It is mainly used for its fragrance, though the peel can be candied or the 'fingers' may be sliced thinly and eaten.
